Ornamental Sweet Potato Tuber - Edible?

Frost is coming -- I dug up my big pots today and planted the hosta and huechera in the garden . . . brought in some annuals to take cuttings . . . to my surprise, my ornamental sweet potato vine produced a huge pink tuber!

Does anyone know if it's edible? Sure surprised me to find it there!

Yes, if they are old enough, they develop a potato. They are edible, but stringy and tough. (Not that you would eat them, but the leaves and stems are poisonous).
You can store it in a fairly cool place and plant it again next year.
