Best black currant for making Cassis (lambic)

armyofda12mnkeys(7a, Philly, PA)April 20, 2012

I been constantly buying Lindeman's black currant lambic (aka 'cassis') this month.

Thats some good stuff. Think its my new favorite light alcoholic drink.

Prefer it much more than cider...

Has a slightly more tart flavor than rasberry lambic (aka 'framboise').

Anyone make their own cassis? What black currants are good for this... the 'pungent strong' ones, the sweeter ones (Crandall?), etc.

Thanks!,

Ari

I had to look this up because I'd not heard of lambic. It seems it is essentially brewed like a beer.

'Cassis' as used in France and elsewhere in Europe is a liqueur at 15% ABV so when you start researching recipes make sure you find the right kind of 'cassis'!

The British blackcurrant soft drink Ribena is made from many different varieties apparently, mostly the 'Bens' named after Scottsh mountains e.g Ben Starav, Ben Gairn, Ben Tirran, Ben Vane and Ben Klibreck so I should think any of those would be suitable for juicing for your brewing.
