If you eat them like they are right now, they just taste like an unripe Winesap. But if you let them hang on the tree 5 more weeks they look like this photo and have a deep, dark, rich, winey-mahogany taste that matches the color. It is a fine balance however to get them when they're fully ripe (they're rock-hard before this) and over-ripe and mealy, as they will hang on the tree too long.

They are one of my favorite apples: Distinctive, interesting, but very appley none the less.
