when to end watering drought stressed apple and cherry trees?

I've read many times that you do not want fruit trees entering winter in a drought stressed condition. My trees are all mostly still green and lush. I am watering them weekly since we haven't had appreciable rain in almost 2 months.

question is what is the sign I can stop watering. I'm assuming root growth continues for sometime after leaf fall but maybe thats wrong.

anyway what can I use as the signal it's OK to stop watering? (it takes a long time to water 150 trees.)

I would say a hard freeze, which should happen for a lot of us this coming weekend. I watered a bunch of my trees the past few days and that is it...i'm done.
