Do Persimmons Continue to Ripen?

Do the Japanese non astringent persimmons continue to ripen after they are picked the way that tomatoes do? Can you pick a persimmon while still "green" and put it on a window sill?

For the best flavor pick it when it's just turning orange and let. It will ripen if picked green, but would probably lack the sweetness.
