Next year I might be tempting to test this on apples and see what happens, my guess will be good,... what's yours?
After packing they still will be stored in the fridge.
I suspect you'll want to pull a very weak vacuum. Otherwise I'd guess the pressure wouldn't do good things for the apple.

This idea came to me just the other day when I pulled some apples out of a fridge from my in law who went oversea for a couple of month, the fridge never opened and the apple in plastic bags, [fairly tight] looked like fresh from the tree. Other apples in my fridge were getting shriveled up. The problem here is that we have very dry air. Hopefully next year I will try some in a root cellar, ..suspecting bagging will be better too?
Bagging can work beautifully, with the bag full and very tightly tied. It's not uncommon for the apples to come out of the bag moist. Even Liberties can (not always, but sometimes) be kept into late winter/early spring and still be very fine.
We have very dry air here as a rule too.
