Mizuna greens bolting....what to eat? Flowering chinese broccoli

Will the stalks cook up nicely? or stringy? Can I use the immature seeds pods like I do with radishes?

I put some buds in, how about open flowers - ok?

With the brocoli, I've got open white flowers - still ok to toss into a stir fry?

Mizuna flowers are edible. Stalks probably a bit stringy.

Broccoli flowers are fine, too. Seeds and seed pods also edible. Seeds taste similar to mustard seed.
