Transplanting bamboo in Pa

I was going to dig up some bamboo this spring and transplant it. Can I dig up roots and cut stem off at about 2 feet high? Won't the bamboo just spread by root matter? I want to do this so I can transport it easier.

I am a bamboo newbie too, but have received a few different varieties lately by mail, well, UPS. As long as there is some signs of a couple small culms or unopened stubs of culm or culms, they are like unopened buds, but at ground level.
