Looking for a species that fits me

I am new to bamboo but would really like to start growing. I want something that I can eat and use for wood. The problem is I live in zone 4 of Wisconsin. Are there species that I could pot and bring outdoors for the summer? Any info is appreciated. Thanks for your time.

In zone 4, pretty much any bamboo will not survive without protection, but with a polytunnel, or greenhouse, you should be able to grow quite a few species.
