The hard work is starting to pay off. I got tomatoes coming out of my ears. The squash is doing great, even the ones that had the wrong seeds in the package. Grant do you remember back when I planted what said it to be a UFO(scalloped squash) squash and I got something different. Well they turned out to be acorn. Even for this time of year they did fine. I ended up buying some scalloped squash plants. Yahoo

I don't always follow this completely, but close.
1) large pie pan-10-12"
2) 4cps thinly sliced zucchini- 2 @10" aprox.
3) med onion chopped
4)1/2 tsp salt
5)1/2 tsp pepper
6)1/4 tsp garlic powder --1/4 basil---1/4 oregano
7) 2 eggs
8) 8oz bag shredded mozzarella (walmart $2.44)
If I have it, add a little parmesan -Jar or shredded
9) 2 tbl mustard

  1. 1 can Grand dads (8)biscuits-I use store brand(cheaper

cook in butter zucchini/onions until tender
stir in all spices- cool
Large bowl- combine eggs/cheese- mix
Add zucchini mixture stir
Pam pie dish
Separate biscuits- flatten and pull into triangle shape and press into pan. pinch /press peroration together -creating pie crust.
Spread crust with the mustard
Poor/spoon in zucchini mix (If extra cheese sprinkle on top)
Bake 375 18-22 min. until knife inserted comes out clean

Camp Verde
PS I have added cooked crumbled bacon and cooked crumbled sausage If I happen to have it

Sounds good, thanks for posting. I may try this with a polenta crust, bet that would be good too but not as quick as the biscuits. Here's a recipe for Polenta Pizza from Moosewood Cookbook. You could just use your zucc pie recipe but sub the crust. Let us know if you try it and how you like it. We're a big corn meal eatin' household here!! Oops, can't post a pdf. Thanks for the update on your Mystery Squash too, I'm glad it's something edible and wonderful like acorn squash. I've been wondering this whole time what it was, so thanks for mentioning it.

Looks like you're having an awesome summer harvest up there. Enjoy it and do keep us posted. It's so fun to see and hear who is growing what, and when! Other than herbs (basil and rosemary coming out my ears) I don't have too many edibles going right now. Soon though, lol.

I was inspired by your pie. This is my zucchini pie. I think my zucchini is done for the yr. The monsoons really did something to them.

Nice. I may make one this weekend. But I have to buy my zucc's - drat it. I've not been able to get any squash this year or last. Don't know what I'm doing wrong but it's not happening.

I really haven't had much luck with zukes either, Mary, and I'm annoyed, LOL. I'll be buying some and making this recipe for sure. Happy gardening and happy eating, all!

My husband just planted a few more seeds. We didn't have a very good crop of zukes or yellow crook neck last year. This year has been totally different. I think it is based on the weather and not anything any one is doing. I am sorry that Mary and Grant are not getting any this year. I will be making another pie this coming weekend, got to do something with all the zukes. Want to come up for pie and coffee? LOL

No shrooms in there. I based my recipe on yours, but used regular pie crust instead of biscuit dough and added crumbled bacon. I was planning on using ricotta cheese too but forgot. It was good. My zucchini is producing blossoms again but really looks ragged. I got my seeds "costata romanesco" from because it was the least expensive. They have me some free tomato seeds with the order. I like this variety. Not super prolific and can be grown in large container because it's not vining squash.

It's funny how vegs sometimes just refuse to grow. This year no zucchini. Last year the plants were massive ( I didn't know they could get that big) and I had tons of zucchini. The chickens loved the big old tough ones that got away from me with growth. Same with the cukes, great last year and this year they set some fruit and the little things fell off.

Found a few more baby zucchini today. Made chicken tagine with preserved Meyer lemons. There's butternut squash, taro, carrots, garbanzo beans, tomatoes and onions in the pot.
