I have three pineapple tops but 1 of them has three heads! is this normal? do i need to amputate 2 of the heads? will they all produce pineapples?

yes, no worries.

some pineapple strains produce more pups than others.

take off the pups when they are good and ready, they will easily come off.

Yeah, just separate the crowns and root them individually. The mutants aren't usually sold as "whole fruit" at grocery stores. Next time, when you have something this interesting, post a photo for posterity.

Good luck.
