tomato for sauce?

What's your favorite tomato for sauce? I'm ordering seeds, but have never really done sauce tomatoes before.

Be careful about tomatoes called simply "Roma" or "San Marzano". There's lots of stuff out there that isn't exactly what you think it is.

I use any tomato that is ripe for sauce. The non-paste ones just take longer to cook down, but the sauce is just as delicious. Of the paste ones I like Costoluto Genovese and San Marzano Redorta too. Amish Paste and Opalka are delicious but yield has never been good in this garden.
