Camellia's out of control

I just recently bought a house and there are two camellias planted in the back yard. It is an older house so I am assuming that these are older plants. They had lovely blooms this year. However, they have been growing unchecked for who knows how many years. They are both about 20 ft tall and do not have any shape. I would like to tree them up and make them shorter. Is this possible without killing them? Any advice is appreciated.

If you are going to remove lagre amounts of plant material (1/2 or more), I would do that during the winter months when the plant is somewhat dormant; otherwise, I would do it after blooming.
