Question on red onions!

I got a package of red onions & I have raised onions before but this time I am getting lots of little red onions just about a foot from top of plant. I've broken them off a couple of times & separated them & planted them. Is that how I should do it, I suppose I could bend the stem of onion over & put it in the ground & use a small rock to keep it it place. I only planted some little ones a couple of days ago, do you think they will grow., Is it best to take them off so bulb will develop better on the bottom. I usually have white, Spanish or Vidalia . Would be nice to have all these new starts coming along later! Thanks! I'm in So. Ca.
