Can someone ID these succulents?

Found the color and form on these intriguing (and beautiful) so I photographed 'em. They were on sale in an odd arrangement where they were seemingly planted only in moss. Could someone ID them for me? Or point me in the right direction? I know it's sometimes tough to positively ID such plants when they're not in bloom, so any assistance would be greatly appreciated.

The photos are full spectrum color, so the colors are accurate.

Those are both Sempervivum - there are more than 1500 hybrids / cultivars / species / varieties. Semps are monocarpic - when they flowering the flowering head (not the plant) dies, but it usually offsets freely.
