Easy good recipe for extra lemons

Here's a recipe for what to do with all those lemons you need to harvest.
1) wash fresh lemons
2) slice lemons
3) freeze on tray
4) Take frozen lemon slices and discard remaining seeds
5) chop in food processor until well chopped
6) put in jars and freeze
7) take jars out as needed to thaw and put chopped lemons on any dishes or food that you need fresh lemons for. Keep one jar at a ime in refrigerator to use as needed.

Refreshing and still tastes fresh. Lots of vitamins from the rind.

What is an extra lemon? LOL

Not sure what I would do with a jar full of lemon slush. If that's the way you normally use lemons then it makes more sense.

I harvest mine over time, and never bring in more than I can use for a given recipe. My Meyer Lemons hold very well on the tree. Today I brought in a bunch of lemons and started a batch of Limoncello and squeezed some juice for lemon ice cubes.

Note: This is my first time making Limoncello and have veered ever so sightly from Giada's recipe. I'm using Everclear instead of vodka, will steep the zest for a month, and will cut way down on the sugar as well.
