What Height To Prune To?

I had to cut my fig tree to the ground this spring because of cold damage. It is growing back nicely with several new shoots and is about 3 feet tall. I would like to grow it like a bush and keep it below 6 or 7 feet so my question is at what height should I cut it? Is it better to pinch it at a certain height to stop it from growing taller or should I just wait till spring and head it back?

You can do either.

If you pinch low it will take a low outward growth pattern. Rising slowly.

If you allow it to grow, you can prune later to the shape you want. By pruning, you can control the shape a bit more.

Pinching will allow you to get fruit and establish branches earlier.

Next year just pinch the terminal buds and the lower 3 to 5 nodes will send out branches.

It really doesn't matter what you do. You can control it either way. Pinching will just allow you in following seasons to divert energy to growing figs and not growth.
