What are some four season vegetables?
In general they are frost tolerant vegetables that are able to keep growing and producing through the short days of the winter, especially when grown in some form of season extender such as a cloch or hoop house. Examples include spinach, cabbage, collards, kale, lettuce, carrots, beets, swiss chard, leeks, onions, and komatsuna, tatsoi, and many other oriental greens.
Many people don't realize that cilantro, chervil and parsley are also very winter hardy. In fact, my winter-grown cilantro is much better than plants grown other seasons. It never bolts in winter and survives very cold temperatures! I grow it in an unheated hoophouse or under reemay.
But, I assume I cannot go and plant spinach, etc. now or it will not sprout, correct?
Or, can I plant but under coldframes (old window panes).
