plant type and source recommendation please

I love & adore ginger in everything. I'd like to grow my own but I live in zone 6/7. I thought I would plant "woodland ginger" but when I researched it, reports said it is actually a carcinegenic (sp?)

I know there are many kinds of ginger that are simply ornamental. So it gets a bit confusing to me.

Is there a plant with a good ginger flavor that is safe to eat and cook with that will grow here? Any recommended sources?

The ginger that is edible is named Zingiber Officinale and is rated for zone 8. This ginger is easy to grow and could be container grown and protected in the winter in your zone. It's not a great bloomer but since you are growing it for it's edible quality, no big deal.
