What to do with ginger

gardenlady76(TX coast/9)January 18, 2012

I just harvested my grocery store ginger that I was growing in a pot in the greenhouse. There is so much of it and I have no idea as to how to store it. I have given away many large pieces replanted others and still have a lot left over. Any suggestions how best to keep it from spoiling????
