Depends, If you using it as a summer squash, you are eating it before seeds develop. If you let mature, the seeds will be in the bulb shape at the blossom end. It is a long neck version of a butternut.

Farmadilla, does it actually taste like butternut when it's mature? This is my first year growing it and it's "the vine that ate the garden!" I love it young and tender and will try it mature, also, but wondered how to prepare it then. We like butternut with brown sugar, butter, and cinnamon.

In my opinion yes, but not a top quality butternut. If you are familiar with the Neck Pumpkin, that may be a better comparison.

I'm not familiar with the Neck Pumpkin, never having grown pumpkins or winter squash before. In fact, this is the first year I've ventured away from the traditional yellows and zukes. My gardening circumstances changed in recent years and I'm playing with new varieties to see what works best in my limited space. Before, I was more interested in growing the traditional crops for freezing and canning and not so much in experimenting.

Thanks farmerdilla for the answer. It should be an interesting taste test.
