How much would a small eggplant weigh ?

Hi - I made Ellie Top's Eggplant Caponata over the weekend and only got out half of what the recipe said I should. Problem is that the recipe states only "1 small eggplant", "2 large tomatoes"; "1 medium red pepper" - not exact quantities... In the Ball book purchase guide they say 3 medium tomatoes will yield 500g - could I then assume 2 large tomatoes would yield 500g or should I make it 400g? They say 1 large sweet bell pepper yields 175-250g so can I use 150g for a medium pepper ? The Ball book doesn't mention eggplant at all. Another of the Ellie Topp recipes says that 2 large eggplants yields 1Kg so can I presume that a small eggplant will weigh about 350g ?

As if I'm not confused enough :-)

Small? Is it 2 ounces, or 2 pounds? Small can mean many things like a small ship measuring 80 feet long, or just 8 inches long.

I happened to go to the store today and while I was there I weighed one of the small eggplants. It weighed just about 1 pound. (453.5 g. I think.)

Thanks - that helps a lot - I'll take it at 450g to round it off then - hate it when recipes don't give exact weights - especially as I don't live in the US and never know whether a US small eggplant and a SA small eggplant are necessarily the same size. Thanks Lynn !

Not only that, there are a LOT of eggplant varieties out there.. Here is a local source for seeds.
