Jellymelon - how to eat it

My wife and I are growing Jellymelon (African Horned Cucumber or Kiwano) for the first time and are wondering what other ways this fruit is eaten other than raw. Anybody have any tried and true recipes or preferences?? Thanks for your help.

You can scoop the pulp and seeds from the shell and put them through a juicer. The resulting juice is decent, especially if you add some lime juice and a bit of sugar or honey to it. It is a little muciligenous just like juice with some banana in it.

Basically, I don't think anyone eats them very much, they mostly use them for garnish.

I think you'll find them very easy to grow and productive. I grew some years ago and got several bushels off of a few vines.
