So I'm watching Jamie on TV

Jamie Oliver if you don't know who Jaime is. He is putting up a few things and I watched and enjoyed what he was doing. I like to watch him but he was about half way through the program and I started laughing and told myself, Jamie would be in big trouble with our Harvest Forum Experts if he tried to peddle those recipes over here. I'm sure the recipes are that same one that people who come here and say "My Granny did it this way and I'm still alive........haha at any rate I thought you all might find it amusing that I was thinking of you all and your efforts to make us get it right. And thank you all for your untiring....(well maybe that's a stretch) efforts to do just that.

I do enjoy watching him sometimes but I didn't see that show....probably would have left me squirming and hoping not too many on this side of the pond at least were taking notes :)

I saw that show. I always enjoy Jamie and I did take down some of his recipes. Of course, I wouldn't shelf store as he does without significant modifications, but my instinct is that acidified as many of his formulations are, they're probably safer than we think.

However . . . and it's a big however. The recipes aren't tested so my instinct isn't sufficient.

I'm more comfortable with his chutneys that with his marinated veggies stored under oil.
