I used regular pectin for a low sugar recipe - result?

Hi All,

I just realized (as I was putting everything away) that I used regular pectin in a recipe that called for low sugar pectin. I knew I needed low sugar pectin, just forgot and picked up the wrong container on the counter.....

Anyway, how will this affect the finished product? Usable or not?

Depends on how much natural pectin the particular fruit has. Probably a very soft set, possibly syrupy. Useable in one form or another.

Some of the best syrups for pancakes and ice cream are jellies/jams that didn't set. My grandkids raved about the Cherry topping, that was supposed to be jam.
