NCHFP Pickles Question

Will be trying my hand at pickling cucumbers this year and as a totally newby to this I have a question. I noticed in the NCHFP site for "quick fresh pack dill pickles recipe", it called for 2 quarts of water and 1 1/2 cups of vinegar. Since this is less that 50/50, I was curious if that is still considered ok. I will continue researching and making sure to use a safe recipe but most of the recipes I have reviewed called for at least 50/50. Thanks for your advise. I appreciate all the great information here.

Yes anything from NCHFP is safe as they are all lab tested recipes - well vetted and researched so safe when followed as written. You will find a few other tested and approved recipes that call for a bit less than 50/50 that are safe when used as written. Just don't try to modify them by changing the amounts called for or adding other low-acid fresh ingredients as that can put them over the line.

The 50/50 rule generally applies to evaluating the safety of unapproved, untested recipes from random sources.

Be careful. That recipe specifies 1 1/2 quarts of vinegar, not 1 1/2 cups.

So yes, this tested recipe is less than 1:1 ratio but not nearly as low as your post indicated.
