Recipe for Enchilada Sauce/BBQ Sauce

missemerald(7 (Virginia))April 25, 2014

Okay, so it's early but I'm thinking ahead here.... My family loves enchiladas and BBQ items so I wondered if anyone had a good recipe for canning Enchilada Sauce and/or BBQ sauce. Hubby doesn't like chunks of tomatoes, so the sauce should be pureed. I already can lots of Annie's Salsa (and we love it) but want to try some other things with the tons of tomatoes that I am hoping for this year. Can't find a good enchilada sauce recipe (or even a good taco sauce) and I haven't been impressed with BBQ sauces that I've tried. I have both a BWB and a pressure canner. Thanks for the help in advance!!

Here is a BBQ Recipe from the National Center for Home Food Preservation:
Ball has this recipe: I have made this recipe using all three spice blends with good results:

Agree that you can always find the basic recipes at NCHFP or in the Ball Books. If you don't have the books you really need to and NCHFP's site should be bookmarked.

Enchilada sauce means very different things to many people but it basically a spiced green or red tomato sauce. NCHFP has recipes for at least 8 different tomato sauces. Or you can always can plain tomato sauce and quickly spice it up at prep time. That way you avoid the problems with spices intensifying or going bland in the jars.
