Mrs. Wages cold pickling okra - water preference?

tomncath(St Pete Z10a Heat 10)May 8, 2014

Hi Folks,

I live over at the Florida Gardening forum but need your help with this question. I can't grow much in the way of veggies during the summer in my little coastal Zone 10 hot/humid microclimate, but I can grow okra :-) I want to do some cold-pickling using Mrs. Wages K-dill frig mix. My city tap water (table at bottom of link) is rather hard and does contain chloramines and other junk, so my question for those of you with experience with this mix is, what is your preference for water and why?

Boil/set for 24hrs?
Distilled?
Purified?

Thanks in advance!

Tom

I do all my canning with well water - hard as he** but great stuff. From your description of your "chloramines and other junk" I'd buy a couple jugs of purified.

Thanks Dave,

Seems I had seen some discussion regarding the potential of "hard" water to effect the efficacy of the vinegar secondary to the waters pH, and my tap water does have a rahter high pH....

You can improve the quality of pickled okra by getting seed for an adapted variety. Granny Franklin is available from Sandhill Preservation and is the best multipurpose okra that I have grown. It is one of the very few that makes topnotch pickled okra.

I'm also in Florida. I've used distilled water for pickles before.
