Plethora of Green (Spring) Onions

nancedar(z7NC)May 29, 2014

I have a plethora or green onions. I thought buying onions sets would give me big onions but these were not marked and so --- surprise! - bunching onions all over the place.

Anyone know if they can be pickled? Or, what do you suggest I do with them after the one ton of them get into the freezer for adding to soups and stuff during the winter?

Thanks, Nancy

Yes they can be pickled using any standard pickling recipe. We prefer dill rather than sweet but many prefer sweet ones. Or you can do them liked pickled asparagus. Also chop the tops for freezing to use in cooking or dehydrate them and use them like chives in salads or as baked potato topping.

You can also ferment them and can them.
