Raw Mung Bean Leaves

philgcdrJune 16, 2007

I have been growing mung beans in soil and the leaves have developed rapidly - are the leaves edible/ OK in moderation/ NOT OK to eat (I currently am raw vegan, so probably would not want to cook them).

Please e-mail "philgcdr@yahoo.co.uk" and/or post here asap

with your knowledge and experience.

Thank you,

Mung beans is the common bean sprout. I think that they become very bitter if left to get green color. When I grew mungs for bean sprouts, they had to be shielded from all light as once you see green color, they don't tatse good.

PS: not good to post an email address here, as it can give millions of SPAMMERS your info so they will start loading up your mailbox..
