Question about cherries

susan_on(6a)June 22, 2013

My husband picked a lot of cherries from our tree tonight, and I'm busy pitting them. I'm dropping them in some water with citric acid so they don't turn brown. I still have a lot to do, and I'm tired. If I put them in the fridge overnight to process tomorrow, will they go soggy from the water?

A little but no so much that you can't use them still.

Depending on how you plan to use them you can also freeze them and then thaw when ready to use. They will be quite a bit softer when thawed but still perfectly fine for jams, pie fillings, preserves, etc.
