Hi all,

I am beginning to harvest my first Rosa Bianca and Ping Tung eggplants and am wondering how to best enjoy them. The Rosa Bianca is so esteemed, I especially want to enjoy it how it is best.

Any suggestions for fresh recipes?

Also, I did some research about preserving eggplants and saw a blog where a woman roasts her eggplant in strips or chunks then freezes it. Has anyone done this before with success?

Here is a link to lots of previous discussions here about eggplant. Includes some good recipes as well as info on freezing/preserving.

You might also want to check over on the GW Cooking forums as they focus more on fresh use recipes than we do here.

The roasted and then frozen chunks sounds like it would work well. Strips might be too mushy for use when thawed.
