I am beginning to harvest my first Rosa Bianca and Ping Tung eggplants and am wondering how to best enjoy them. The Rosa Bianca is so esteemed, I especially want to enjoy it how it is best.
Any suggestions for fresh recipes?
Also, I did some research about preserving eggplants and saw a blog where a woman roasts her eggplant in strips or chunks then freezes it. Has anyone done this before with success?
