Any simple sweet pickle brine recipes for the fridge out there?
Also maybe sweet/pickle relish recipes?
Have you looked at the pickles on NCHFP?
You could cut a batch in half or quarters and just don't process, store in the fridge for several days, then eat!
Also, LindaLou's Sweet Pickles are awesome. Takes about 10 days, but oh, so worth it if you love sweets!!

You can make spears rather than chunks if you prefer.
Any sweet pickle can be ground into relish as needed!

I can't eat onions (or any member of the allium family), so can I just leave out the onions or should I substitute an equal amount of additional cucumbers and/or peppers?

Leave out the onions. Poses no problems.
But you cannot sub additional cukes or peppers for the onions - they are different pH.
