re: freezing verses canning tomato's

I don't know how to can tomato's so I freeze them. I use freezer zip lock bags-quarts. It is so worth it. If I knew how to can tomato's I would most likely try it. What I do is wash the tomato's, then I take off any thing that looks bad such as spots. Next I de-seed them and grind them in a blender. I like to mix all the different kinds of tomato's I'm growing. I take fresh basil washed and dry it . Then I

add the tomato's and the basil to the bag -zip- lay flat in freezer.

Last yr. I froze over 40 quarts. I'm Italian so we call our sauce gravy! I also make Italian sausage/for a living, I have a store. Sausage I do know how to put up! But back to tomato's. Garden tomato's make the best gravy! Also great in homemade soups! Much better than store bought.My husband always can tell the difference of just using can tomato's or when I use the frozen. IT'S SO WORTH IT!

The nice thing about canning is it doesn't take up any freezer space. It's pretty easy to do once you do it! By that I mean, it can be intimidating when you read about how to do it, but once you actually do it, it's very easy.
