What to do with Carrots

Normally, I can my carrots. But this year, my pantry is already full - and so are my canning jars. So, I figure I can over-winter them in the ground (won't they get woody?), dehydrate them, or freeze them.

What is YOUR favorite non-canning way to preserve carrots - and why?

Thick slice, blanch and freeze. Spread them out on cookie sheet to freeze and then bag so they don't all stick together. Work perfect for winter pot roast, soups, stews, chicken/beef/turkey pot pies, and diced for stir-fry.
