Canning Cranberry Sauce

missemerald(7 (Virginia))November 10, 2012

I went to Costco this week and saw these lovely 4 lb bags of cranberries for sale... got to thinking, is it possible to can cranberry sauce? I make it fresh when I am able, but in April, for example, all I can find is the ikky canned stuff. Does anyone have any experience doing this and recipes to share? We prefer whole berry type sauces and want to keep it as simple as possible... no shallots, jalapenos, guacamole, or whatever.

I looked on the internet for recipes... a lot of them are open kettle style, and I'm just not doing that.

Thanks!

Thanks, Dave. Can this be used as "whole berry" too? I noticed that it involved a sieve so wasn't sure.

Yes you don't have to sieve them if you don't want to. Of you can also use the Canning Cranberries instructions.

I just toss the bags of cranberries into the freezer. Pull them out when you need some and usually don't even have to defrost, just rinse quickly and cook. I cannot tell the difference whatsoever.
