canning green salsa and other questions

I had found a recipe for green salsa and can not seem to find it again.

I read that you can not add fresh cilantro to this salsa before canning...why?

and I also read that you have to peel potatoes if you are canning them...why?

also, I was hoping to find somebody that might know how to can sliced green grandmother use to do this, but I don't know what tomatoes she used nor how she did this...I love fried green tomatoes and when she would can them we could have them all year round...I miss these treats in the winter, but not as much as I miss my grandmother!
