Does anyone make fresh pea soup out of their snap peas? I thought maybe you could cook them and then put in a blender with half n half. I will also post in the harvest forum
I've never thought about making fresh pea soup. I'll be it would be delicious.
Evaporated milk is a very good alternative to half and half in cream soups.
I think I saw this done on a cooking show one time (not with snap peas, though, with shelled green peas). It looked great, a really bright green. I don't remember the recipe but it was really simple, like mostly pureed peas with only a few other ingredients (I'm not sure if it even had cream in it).
A Google search for "fresh green pea soup" turned up some recipes that look promising.
Snap Pea and Parmesan Soup
Lynn Rosetto Kasper profiled this recipe on her show last year in May. It sounded really good, but I never made it yet (always too much to do and not enough time to do it!).
The book it excerpted from sound really neat, too.
