Suggestions for a high tunnel crop?

I have about 500 sq ft of high tunnel space which I'd like to seed to a cool-season crop that will be ready to harvest on or before June 15th. We have quite long days here.

So far I've planted radishes, swiss chard, beets, spinach, claytonia, kale, salad turnips, short-season carrots and dill. I'm trying to think of something different for the remaining space. I have onion sets but I'm not sure if 60 days would be enough to get decent baby onions.

Cilantro, chard, lettuce, tatsoi, arugula, Tokyo bekana?

If the onions have sprouted, I figure 3-4 weeks for green onions.

if you have the room try seedless cucumbers on a string trellis system with tomato clips.. the seed is a little pricey but you get good money for them at market...

try Johnny seed, Tyria (F1) (OG) 56 day or Socrates (F1) 52 day..

I guess I might go for the onions after all. Do you have much success selling immature regular onions as green onions? It's the first time I'm trying it.
I'd like to avoid frost-sensitive veggies because it's still very cold at night.
I thought of tatsoi and the other brassicas but they bolt by mid-May here.
Cilantro - gotta try that too. Thanks.

Chervil is quick and easy. Sorrel might do as well.
