Garlic scapes- marketing and price?

It's my first year growing garlic to sell, and it won't be long before the scapes start to shoot up on my hard neck garlic. I have always used them myself, but have no idea how to price or market them. Any thoughts? I'm in a mountain region of California, with a fair number of "foodies" attending my market... But most customers haven't ever heard of scapes.

Price to allow those who haven't experienced scapes before, or??? What do you all think? What's a fair price?

I sell mine for $8 a pound and sell in either 1/2 or 1/4 pound bunches.

I have found the public will only buy so many. However, if you find an upscale restaurant, they'll buy all you can supply.
