I am new to garlic planting and would like to know what will happen to my garlic if I don't harvest it. Will it crap out at the end of the season or will it come back again next year?

It should come up again. It may not be as big as you'd like, but I'd think you could go several years without a noticable change. I like to dig it when the tops are still attached, so I get most of the cloves.
