Rudbeckia hirta Nutlets

I collect some Rudbeckia hirta flowers today. The flower heads had lost all the petals and the stalks start to turn brown. Some flower heads have a gray color seed and some have a jet black color seed. Which color is the one that is good to keep?

Seed will look like something birds want to eat.
