Anyone ever harvest this seed?

I kept waiting for someone who has actually done this to respond, but they haven't so I will.

I have just regular cone flower, both pink and white. I just cut off the seed head and rub off the spiky seeds. They are very sharp so wear heavy gloves when you do this. You have to hurry because the finches seem to love all cone flower seeds!
