1 inch green thing boring into and eating my lemons

Hi Everyone - This is my first post, so bare with me. I was picking lemons today from our Meyer Lemon tree. One of the lemons had a hole in the side of the fruit with a bit of the rind eaten away around the hole. I squeezed the lemon and out came a green segmented little worm/caterpillar like thing. It was skinny and about an inch long. It was a light green and had about 14 sets of paired legs. The head was dark, perhaps brownish or maybe just a little red. It isn't furry, just smooth green.

I did an internet search and couldn't find any suggestions for "green thing eating into my lemons." I'd love if anyone could identify and even better, offer an organic treatment. Thanks!

Some caterpillars do that.
