2010 Pepper Vinegar
Back in September / October of last year I had more peppers than I knew what to do with. At the time, I decided to put them in a vinegar / salt / water mixture, mix in ball jars and store in the fridge. 6 months later they are still there and taking up space. I just tried a few peppers and found that the bhut jolokias I was eating had lost some heat but still had a decent crunch ( althought they were a little mushy )....I have a few questions I am sure the experts out here will know immediately:
- How long will they be okay in the fridge? Will they go "bad"
- What can I do with the peppers besides just eat them whole?
- What would you do?
