2010 Pepper Vinegar

Back in September / October of last year I had more peppers than I knew what to do with. At the time, I decided to put them in a vinegar / salt / water mixture, mix in ball jars and store in the fridge. 6 months later they are still there and taking up space. I just tried a few peppers and found that the bhut jolokias I was eating had lost some heat but still had a decent crunch ( althought they were a little mushy )....I have a few questions I am sure the experts out here will know immediately:

- How long will they be okay in the fridge? Will they go "bad"

- What can I do with the peppers besides just eat them whole?

- What would you do?

I can't give a definitive answer to your questions. I have no idea what your percentages for your vinegar / salt / water mixture were?

If you're interested in pickling/preserving peppers in the future, I strongly urge you to seek out trusted and safe recipes/methods. The US based National Center for Home Food Preservation is the go-to source for tested safe recipes. See link below for page referencing a few pickled pepper recipes.

Also, GardenWeb has a Harvest Forum where food preservation is covered. Actually there are a number of certified food preservation folks who monitor the forum daily. Nice friendly people and a wealth of information.
