Does anyone have a recipe for ripe tomato relish? There are plenty of green tomato relish recipes but I have an over abundance of ripe tomatoes and would like to can them in a relish with onions and bell peppers.
I would try the GW harvest forum, they deal with preserving the harvest. I canned pickle relish this year and discovered that my recipe was meant to be very "liquidy" in order to be canned safely. Apparently you pour the excess liquid off when you open the jar. I don't have much experience with canning, so I am worried about safety. I have learned a lot over there.
