Moldy Sweet Potato Vine

I recently was given a very large sweet potato to try and vine out. I had to cut it into quarters just to get it to fit in the jars. 3 out of four went icky, but the remaining one has developed a gorgeous root system and almost a foot of foliage already. The top 4 inches of the potato stuck out of the jar, and where it wasn't in water, it's now got mold growing on it. How can I fix that? Should I shave off the moldy areas and put it directly in the pot? Spray with vinegar water and plant? Ignore and plant? Should I maybe snap the top of the plant off and try rooting it again, minus the potato? It's got mini eyes starting on the stalk... I really just want a pretty, easy plant for some greenery to see me through the upcoming winter, lol.

Aerial roots are forming on the vine. That will continue making roots in water or soil. I've never seen sweet potato grown this way.

The tubar part of the plant unfortunately needs to go.You can cut the stem and place it into some water with a ph of 6.0-6.5 and you should have roots forming in a cpl of days. The issue is that you had to cut the tubar (potato) to fit the jar. Make sure you change the water out about every week or so to keep the oxygen (02) and carbon dioxide(C02) in suspension. The plant will thank you for it.
