The flowers are starting to dry and I want to save seeds, but not sure what part of the flower head is the seeds.

Ruth, the seeds are in the swollen end of petals where they are attached to the core of the flower head. They don't look like much, just a small teardrop shaped thickening inside the papery sheath. Commercial seed sellers cut the "tails" off and discard the rest of the material, but I just sow the whole thing.
