Easter Eggplant seeds?

I have four nice plants,a ll with white eggs on them. I see one egg has finally started to turn yellow. Do I have to wait for them to turn from white-to yellow-to orange first before I can save the seeds? Or would the seeds from the white one be viable? We have a short growing seaason here, and expect frost about the middle of the month. Any help Please! Thanks in advance Linda

Did you get them seeds off of me? If so, wait till they turn yellow and pick them, let them dry out a bit then cut it open and collect the seeds. Karri

Definitely wait until they turn yellow, even if you have to bring inside. You'll have tons and tons of seed!

No need waiting for it to turn yellow you can still enjoy it. Grew up eating it all the time.
