Planting cool weather veggies/flowers from seed in Sept/Oct

I would like suggestions on how to direct seed cool weather veggies & flowers in Sept/Oct. Most of these seeds need cool soil temperatures to germinate. When is the best time to direct seed spinach, lettuce, peas, larkspur, poppies etc in zone 7? Any tips in getting these seeds started would be appreciated.

In October, throw seeds of larkspur, poppy, cornflower on the ground where you want them. In early March just thin them out and watch them take off. I do the same with dill.Leaf veggies are good planted now, but try peas planted in February. This is based on my experience when I lived in No. GA. This is about the same time I plant them here in Z9 So LA.
